As part of the return of whisky making to the city, Stirling Distillery has filled its first whisky cask with new-make spirit this week (27 November).
This follows an initial brewing mash on 3 October and the distilling process will see craft small batch runs over the next few months as the team develop the whisky’s gentle lowland flavour. The first releases of Stirling whisky will be ready in late 2026.
Distillery co-founder Cameron McCann has sampled the new-make spirit. He said: “It has a great soft flavour with a fair bit of maltiness. We’re all looking forward to seeing how this matures in our casks and grateful to everyone who has invested in our whisky journey so far.”
The distillery has a limited number of places left for its whisky club that will give members first refusal on all new whisky releases. For £350, members will also receive a ‘VI Casks for King James’ six-bottle set. Only 300 bottles are available and will be released biannually over three years from 2027.
Stirling Distillery opened in 2019 focusing solely on gin, with the intention of moving into whisky as the business grew.
